I have “steak with green peppercorn sauce” in the menu!

If you have 20 minutes then it’s quite easy to prepare it.

2 sirloin steaks (180 ~ 200gr each)
2 teaspoons olive oil
100ml white wine – not necessary a good one 🙂
150ml beef stock – in otherwords boullion
2 teaspoons green peppercorns in brine, drained
1 teaspoon of mustard (Dijon)
3 tablespoons (1/4 cup) thickened cream
green salad to serve

Ok here we go!

At first put some olive oil on the steaks and make sure that you brush them good then season with salt and pepper. You need a pan, preferably a grill pan is the best. For example Skänka would be fine. Heat the pan and when the pan is really hot, add the steaks and cook for 150 seconds (2,5 mins) on each side for ‘medium’. Well if you like it ‘blue’ make it 20 seconds each :). Set aside and keep warm while preparing the green pepper sauce.

Wine and the beef stocks should meet in a pan and start to bubble. When you observe the bubbles exploding, reduce heat to medium and add the peppercorns. Next step is to add the mustard and cream. Let it simmer for 2-3 minutes until the sauce is slightly thickened and become glossy. 2 plates, 2 steaks and the delicious green pepper souces with some salad at the side is waiting for you to enjoy.
